The Company:
This is a key role and you will have the opportunity to become an integral part of the company and a key support with the opening of their new stunning flagship opening in Brighton which will be the companies 6th high profile opening. The new opening is set within a multis faceted space, glamorous high spec interiors with stunning cocktail bar area, restaurant and private dining space. The capacity will be approx 140 pax The premise of the restaurant will be “ cooking on fire “ within a high spec brand new fully equipped kitchen. The primary focus on joining the Group will be overseeing and delivering the pre-opening phase and menu creation and development of the new opening in a hands on capacity.

 You will have responsibility for:
Keeping the groups culinary identity on trend within the outlets.


People

• Help to create the family feel within each of the Restaurants Brands. Ensuring all our BOH teams know the importance of always fostering good relations and effective communication to deliver a great 
      and memorable experience to both our guests and fellow staff members.
• Ensure you identify the recruitment needs for the restaurants and work together with your Head Chefs to actively participate in the recruitment and training and mentoring of all chefs.

Financial 

• Have full accountability for the control of all stock within the restaurant Kitchens ensuring that products are always available, stock control procedures are strictly followed, and GP 
        targets are achieved.
• Ensure kitchen rotas are prepared in ample time, ensuring that the restaurants are appropriately and efficiently staffed at all times, and labour targets are always achieved.
• Procure & utilise our national and local suppliers to ensure the sourcing of the best products and prices
• Ensure GP targets are met with consistent review of waste management and stock control 

Service 

• Your role should primarily be in a hands-on capacity, spending a high percentage of your time in the kitchens, training and supporting your team
• You should spend at least two shifts per week in each individual site
• You must ensure a presence in the restaurants at peak service times including evenings and weekends
• Oversee all menu changes ensuring a smooth delivery to our guests and that all staff have received full training and tastings in sufficient time ahead of any changes

Health and Safety 

Health & Safety and Food Hygiene is the responsibility of all however, as Executive Head Chef, you carry additional responsibility and will be held accountable for the following:
• Ensure that all standards of health and safety and hygiene practices within the restaurant kitchens are the highest possible standards and support the Head Chefs to rectify any shortfalls or failings identified by our external food safety partners / auditors, in house audits or routine visits

About you 
The role would suit a dynamic hands on head /exec chef with premium London restaurant experience of "cooking on fire" who is looking for a new challenge and exciting lifestyle relocation to Brighton 


• Min 5 years’ experience as a Head/Exec Chef working within a quality restaurant/ hotel environment, with at least 2 years’ experience in a similar field-based leadership role
Experience of cooking meat, fish, seafood and vegetables over fire is essential for this role as well as being on trend and creative and well organized. 

With the ability to lead on a high profile opening with the full support of the team.. 

• Work in fast-paced environment with short lead times
• Consistent display of leadership skills including communication, inspiration and leading by example. 

• Must be passionate foody and have outstanding food knowledge and ability to demonstrate natural flair with a good pallet – basically you must love food and cooking!
• Must have an eye for detail 
• Good all-round knowledge of cuisines from around the world, various cooking techniques and production processes
• Good communication skills working closely with guests, chefs, product developers and procurement teams ranging across the hospitality industry
• Ability to work on own projects as well as part of a team on larger projects
• Problem solving, thinking on your feet
• Computer literate with a working knowledge of Microsoft Excel, PowerPoint, and Word
• Have a vision for excellence and methodically look for opportunities to improve what we do daily

Salary and Benefits 

Independently owned group - great support for the executive to working within a growing innovative company 
£80 - 100 k per annum plus 20% bonus 
position to start July/August - Launch in September
